Our market here is very limited, but I think I'll try Eggplant. Recipe suggestions are welcome!
Mmm, eggplant!!! I'd slice it sorta thin, brush some extra virgin olive oil on both sides and grill or bake it, flipping halfway though, then serve it layered with fresh basil leaves, thin tomato slices and small/thin slices of fresh mozzerella. Drizzle some balsamic vinaigrette over the whole thing, and some freshly ground pepper and dash of salt.
ReplyDeleteOr find a healthy pizza crust alternative (flat bread, pita perhaps) and top w/ the same things as above, but in pizza format, with the eggplant slices on top.
Now I want eggplant.

ReplyDeleteGreat goals. Good luck. :) We like baked eggplant too and I've even used the baked slices in sandwiches and wraps. Not right now as I'm doing a six week, no wheat thing. You can include it in a stir-fry too.

ReplyDeleteTogether again on another challenge. Yay! I love your "stop the snacking" goal. I am a snacker and am anxious to see how you do. And I love eggplant, too. Be sure to let us know how you end up preparing it. My veggie is kale. And I have no idea what to do with it. We will see...

Eggplant is so good!! So much you can do with it. My favorite is to either just grill it and eat it that way or I make a light EggPlant parm in the slowcooker!
